We are a small family-run apiary that aims to produce the highest-quality unadulterated raw honey from our 30-40 hives. A hobby that started with an interest in beekeeping and replacing sugar in our diets with a healthier alternative has turned into a small honey business that focuses on natural beekeeping practices supporting local and American-made products. All our packaging and hive components (frames, foundation, boxes, etc.) are made in the USA. While various pests have become more prevalent in beekeeping over the past several decades, we continue to use the most natural and organic methods possible to treat pests and never apply any treatments while honey is being produced by our bees that will be harvested for human consumption, even though these treatments are approved for use while honey supers are on the hives. Our name originated from the three generations of Williams that assist with the business: William Kutosky Jr., William K. III, and William K. IV, along with William K. III's wife, Emily, and their second son, Wesley.

HONEY VARIETIES
Honey harvests and flavor profiles can vary year to year, but we aim to have at least three harvests – Spring, Summer, and Early Fall. Early season honey tends to be lighter and milder and gets darker with more complex earthy flavors as the season progresses, with some fall honey being almost the color of molasses.

WHAT IS HONEY?
Bees collect nectar, which contains sucrose, and store it in their honey stomach, where an enzyme called invertase breaks it down into simpler sugars, glucose and fructose. The bees then dehydrate the mixture by fanning it with their wings, resulting in a concentrated, anti-fermenting product with a high sugar content and about 15-22% water content.

STORAGE & CRYSTALLIZATION
Store your honey in the kitchen away from sunlight - NOT in the refrigerator.
All raw honey will eventually crystallize. Crystallized honey is still perfectly good. To re-liquefy crystallized raw honey and retain the beneficial properties (enzymes, antibacterial properties, and antioxidants), do not heat over 100 degrees. Our honey is raw and has not been heat treated or pasteurized to delay crystallization. All honeys crystallize at different rates depending on the glucose to fructose ratio. High glucose honeys such as clover honey will crystallize much faster than high fructose honeys such as black locust. The best way to prevent crystallization in long-term storage is to put your honey in the freezer. It will not break the jar and will slightly contract, not expand, in the freezer. To use, just remove it 6 hours in advance and allow it to return to room temperature.
